Cocoa Powder

Cocoa Powder or cocoa solids, as they are sometimes known are one of the main components of chocolate. When cocoa solids are sold as a separate product, it is known as cocoa-powder.

Cocoa liquor is a blend of the powder and cocoa butter. The liquor is used to manufacture chocolates. Unlike cocoa butter, the powder is low in fat, and most of the fat content in chocolates is from the butter.

The powder is added in many dishes, especially baked goods, as an ingredient to add flavor. The characteristic flavor and color of chocolate is obtained from the powder. The butter on the other hand, gives chocolate its smooth texture, and causes it to melt at even low temperatures.

To understand how the powder contributes in the making of chocolate, it is essential that we understand the chocolate making process first. Cacao beans are harvested as pods, which are pried open and left out to ferment. Once this is done, the beans are heated and stripped of their husks, exposing the cacao nibs. These are then ground into cocoa liquor, from which you can derive the powder or butter.

Cocoa Powder
There are two types of powder made from cocoa, cocoa natural powder and Dutch powder. Cocoa natural powder is generally sour as it is slightly acidic. It also bears a slightly reddish tone. Natural cocoa powder is very bitter, and cannot really be consumed as it is. Dutch powder, on the other hand, has a sweeter flavor, as it is treated for its acidic content. So if you’re looking to bake or cook something that requires that you use cocoa, make sure you get the right type of powder. Substituting one for the other will not work. Cocoa solids contain great amounts of caffeine and theobromine, which are absent in cocoa butter.

There are several uses for cocoa solids. Besides its usage in the manufacturing process of chocolate, it is used in beverages like chocolate milk, in biscuits, cakes and ice creams. It is also used as a confectionary for frozen desserts. These powders are rich in antioxidants and provide some health benefits. They are used in energy and protein bars as well. However, feeding cocoa or cocoa based products to pets is not recommended, as they prove to be toxic for animals such as dogs and cats due to the presence of theobromine.It are quite amazing how a simple powder can have so many uses.
